Chicken Chicken Boom Boom (Stir Fry)

This recipe is all of my favorite things: quick, spicy, and pairs well with pasta.

  • 1 1/2 lbs of chicken breasts, cut into thin strips

  • 1 tBsp cornstarch

  • 1 tsp ground turmeric

  • 1 tsp ground ginger

  • 1-2 teaspoons black pepper

  • 3 tablespoons sesame oil or extra virgin olive oil

  • 1/3 cup low sodium soy sauce

  • 1/4 cup honey

  • 2 tBsp rice vinegar

  • 2 bell peppers, sliced

  • 1-2 jalapeños, seeded and sliced

  • 1 medium shallot, sliced

  • 1 can water chestnuts

  • Cilantro

  • Yum Yum sauce

  • Stir fry noodles or rice to serve over

In a medium bowl, toss together chicken, cornstarch, ginger, turmeric, and black pepper. In a cup, combine 1/4 cup water, honey, soy sauce, and rice vinegar. Heat oil in a large skillet. Add bell peppers, jalapeños, shallots, and water chestnuts. You really can add any preferred vegetables! Cook 2-3 minutes and stir in chicken, cooking 8-10 minutes. Add in sauce mixture and stir until chicken is well coated, simmer an additional few minutes and remove from heat. While chicken is cooking, prepare stir fry noodles or rice as normal, and serve stir fry over either. I prefer, the brand Kame, Soba Stir Fry Noodles. Top with desired Yum Yum sauce and cilantro. Enjoy!
