Caramel Bars

This recipe was shared from my aunt’s family and has been a favorite for years! It’s so quick and simple, making it a great option if you’re looking to make something in a pinch. If I make a pan of these up, my family usually has them gone in a day :)


Ingredients:

•1 1/2 cup flour

•1 1/4 cup brown sugar

•1 1/2 cup oatmeal

•3/4 tsp baking soda

•1 pinch of salt

•2 sticks of butter, softened

•1 jar of caramel sauce

•1/2-1 cup chocolate chips


Mix flour, brown sugar, oatmeal, baking soda and salt together in a bowl. Place butter on top of mixture. If the butter isn’t soft enough for me to stir into the mixture with a fork, I put the bowl in the microwave. Monitor closely and stop microwaving before butter begins to melt off. Combine. Spray and flour a 9x13 cake pan. Press about 2/3 of the mixture into the bottom of the pan. I use a spoon to flatten it out. Bake at 350 degrees for 10 minutes. Pull the pan out of the oven. Next I usually take the spoon and press the baked mixture down, as it has risen, but leave the edges. Pour caramel sauce over top. I typically use 1/2 - 2/3 of the jar, however much is needed to cover the baked mixture. The original recipe calls for melting a 12oz bag of caramels and 8 tBsp of cream in a double boiler, so this is definitely a time saver! Sprinkle desired chocolate chips over caramel. I‘ve used dark chocolate and regular chocolate and it turns out great either way! Again, I don’t have an exact measurement as I usually just sprinkle until there’s a good amount throughout the entire pan. Crumble remaining oatmeal mixture over top and bake another 15-20 minutes. Let cool and enjoy!
